RAYO was built to be bolder. Bolder in the way we show up in our relationships, our careers, and our conversations. Bolder in the way we eat, gather, and celebrate.

Our tacos take inspiration from the bold culinary culture of Mexico City and the deeply rooted traditions of Oaxacan cuisine. While grounded in the spirit of street food, each taco is crafted with a more elevated approach—thoughtful ingredients sourced from local farms, layered flavors, and techniques that honor the richness of Mexican gastronomy.

We believe in the power of connection through food. Our goal is to craft electric meals that bring people together.

RAYO started as an outlet for me to move through life the way I’ve always been encouraged to: authentically and playfully. Housed in a fully aluminum trailer — loud in look and sound (there’s almost always music blasting from the speakers) — RAYO is my space to be unapologetically myself through the food I serve and the experiences I create.

I grew up in Brownsville, Texas, the southernmost tip of the state and a border town where Mexican culture and cuisine shape everyday life. That landscape, and many late-night tacos shared with friends, is where I first fell in love with the bold, comforting flavors of traditional Mexican food.

Hospitality runs deep in my family on both sides of the border, in Brownsville and neighboring Matamoros, where food has always been a way to gather, celebrate, and care for people.

Boulder has become an incredible home for RAYO — a hub of people who value community, connection, and celebration. My hope is that every taco sparks joy, brings people together, and leaves just a little room for playful rebellion.

His approach honors tradition while embracing creativity, resulting in dishes that feel both soulful and unexpected. Above all, he is passionate about food and the people it brings together.
